Pretty excited about this little dish... What began as a summer salad of shrimp and avocado has morphed into guacamole! (Shocking, I know, to those who know my love of this food) My avocado was a little on the soft side and bean to mix a bit too much to stay a salad, and sometimes I just love a happy accident! So now we have a protein packed guac! Enjoy!
1/2 pound cold cooked shrimp
2 T Bolthouse Farm's Cilantro avocado yogurt dressing
Handful of chopped cilantro
Juice of one lime
1 t Salt
1 t chopped Jalapeno *optional +/- for the heat lovers!
Serves 2 nicely, a hungry teenager could make it disappear in a walk by.. and of course I would know nothing about that...
