Dill me in...

I thought it might be fun to focus on one herb for a week with appetizers and whoaaaa was I surprised! I really haven't used dill that much but after this week - I WILL. I found it to be such a refreshing addition to so many dishes and have gathered them here for you! Hope you enjoy!

Feta Dill Dip

🌿 Feta Dill Dip || Quite possibly the simplest recipe of the week goes to this creamy, refreshing dip! All you do is blend these ingredients together, drizzle a bit of olive oil on top & garnish with some dill. Pita chips, tortilla chips or veggie sticks are great with this dip - cucumber slices too! 🌿 🔸Ingredients🔸 6 oz feta or 3/4 cup 1/4 cup sour cream (can sub yogurt) 2 T Dill + garnish 1 T Italian parsley 1 T mint Juice of half lemon or about 2 T Drizzle of Olive Oil on top

🌿 Hassleback Potatoes with Lemon Dill Sauce 🌿 This idea is a great “heavy” appetizer or side depending on what size potato is used. (They have tiny potatoes that are a great appetizer size when available) Basically you make your “hassleback” style potatoes & drizzle Lemon dill sauce over them & garnish with a pinch of fresh dill! How to deets below! . . 🥔 To hassleback - simply slice potatoes into 1/4 - 1/2” slices with out cutting all the way to the bottom. This allows for the accordion shape after cooking. Whip up the following potato baste & brush on and into each potato slice. Place potatoes on a lined baking sheet and bake for 45 min @ 400. ( basting gets messy 🤗)

🥔I used a bag of small potatoes 🥔 Potato baste: 1 stick butter 1 T fresh chopped dill 2 T olive oil 2 cloves garlic 1 T lemon juice 1 tsp salt . While potatoes are baking mix the following that will be your yummy tater topping! I had a bit extra & it will keep in fridge to use on anything that can be sauced up! (meats / veggies) 🍋Lemon Dill Sauce 2/3 cup sour cream 2 T whole milk or 3 T buttermilk* 1 - 2 T lemon juice ** 2 T chopped fresh dill, plus more for garnish 1 tsp salt 1/4 tsp pepper * The great milk debate: The milk loosens the thickness of the sauce making it more pourable. Buttermilk like whole cream is thicker, thus 3T, Whole milk & ‘1/2 & 1/2’ would be 2 T, 2% or Skim? Maybe 1-2 T, watching the looseness of the sauce. ** More lemon juice will also thin out the sauce so balance accordingly 😊

🌿Salmon Cucumber Bites🌿 This little bite of cuteness on a stick is super easy to prepare! Once you gather your ingredients it’s really about assembly. Save this one for the holidays for sure! 🌿 🌿How to: Wash and slice your cucumber into 1/2” slices. Mix softened cream cheese, chopped dill, horseradish & lemon. Add a small dollop of mixture to top of cucumber followed by a small piece of salmon & a sprig of fresh dill. Pierce through all with party fork careful not to press to hard and squish all the cream cheese out. . 1 English Cucumber 1 lb. smoked salmon 8 oz. package cream cheese 2 T fresh dill + extra for garnish 2 T creamy horseradish 2 tsp lemon juice mini wooden party forks

Mini Cheese Balls with Dill

🌿 Mini Cheese Balls🌿 Cheese balls are a staple of the appetizer world. Taking them to a miniature size allows everyone to get a bite of the goodness in a cute little portion! This works for any cheese ball recipe or you can grab this one, from my cousin Laurie Byrne of @lboriginals 🙌 . 🧀 Cheese ball basic Ingredients: . 8 oz cream cheese, softened 1.5 cups sharp cheddar cheese 1/2 tsp garlic salt 1.5 tsp Worcestershire sauce 3 dashes hot sauce * add in mix ups in comment below (approx 1 cup) Mix together your cheese ball ingredients then use a small cookie scoop to portion the mixture into small squares of plastic wrap. Twist the wrapped cheese into a ball and refrigerate for about an hour. After chilling, roll the cheese ball in the topping of choice. I used Dill, but lots of different toppings will work. Bacon, nuts & herbs are great or a combination there of! 😋 Now comes the mix ups: If you are rolling in an herb use the above mixture. If rolling in pecans - add chopped chives/green onions (~ about 2 green onions) to the cheese mixture. You can also roll in the green onions with the chopped pecans to get a colorful cheese ball! Even further - mix in or coat in bacon - or a combination of 3! The options are endless! This recipe can make one large cheese ball or about 12 minis depending on the size of your scoop. Serve with crackers or toasts & tongs help with serving. .
