Quick Corn Salsa with Cucumber Chips

Made this quick corn salsa this morning and popped it in the fridge for when my crew came inside from the beach. It was cold and just what we needed. Instead of tortilla chips we are using cucumber slices ... It's soooo good! The cucumber slice substitution is a definite must try, especially if you are carb conscious.

The salsa is a blend of two ears of cooked corn (use the 5 min corn trick a few posts back to husk!) ((ON IG)) 1 pint of cherry tomatoes, 1/2 head cilantro, juice of 3 limes, 1/4 red onion. *add jalepeño if you like (thanks @theelhefe - my kids just don't lovvvve the heat) just slice up two large cucumbers to dip with! Slice them about 1/3" thick to handle the salsa and keep your hands clean, able to bend but 'just' is about perfect! As with any salsa, the ingredients are flexible, play with your food! Add more or less of what you like. Enjoy! :)
