Asparagus Frittata



Asparagus Frittata happiness! Always fun to use the cast iron in it's full capacity.

Asparagus Frittata

Spray/butter oven safe pan depending on your preference. Preheat oven broiler.

6 eggs, beaten (*consider 8 eggs)

Bundle of asparagus, ends broken off and chopped into thirds

1/2 C shredded sharp cheddar, divided

Salt and pepper for taste (1t of salt, 1/2t of pepper for me)

Mix ingredients, save half of cheese out, heat pan, medium high heat, pour in mixture, cook until mostly set, swirl around in pan to settle eggs evenly around.

When it starts looking "set" sprinkle remaining cheese on top and place in oven under broiler to finish cooking for a few more minutes. Keep an eye on it to bubble up and brown off the cheese.

So easy and so good! I served this as four portions with a side, so each wedge was less than 200 calories depending on how you prep your pan.
